McCormick’s flavour forecast 2024: Tamarind takes center stage in culinary trends

McCormick & Co. has revealed its 24th Flavour Forecast, spotlighting tamarind as the key spice for the upcoming year due to its tangy and sweet profile, prevalent in Latin, Caribbean, and Mexican cuisines. This global trendsetter believes tamarind will ignite a curiosity for novel flavours and has introduced a Tamarind and Pasilla Chile Seasoning available online. Teaming up with Black Tap Craft Burgers & Beer, they’ll unveil limited-edition, tamarind-infused menu items in February. Hadar Cohen Aviram, McCormick’s executive chef, hails tamarind’s versatility and taste. Sour flavours, authenticity in regional cuisines, and redefined indulgence are key trends highlighted. Acidic ingredients are gaining culinary prominence; authenticity leads to reinvented traditional cooking; and indulgence embraces both nostalgia and culinary extravagance.
